Neutral protease is refined by liquid deep fermentation and ultrafiltration of Bacillus subtilis. This product is a food-grade neutral protease with a wide pH range and good activity under neutral and moderately alkaline conditions.
How It Works:
Proteases belong to the class of hydrolases. According to the location of the hydrolysis site of the enzyme on the peptide chain, proteases can be divided into endopeptidases, aminopeptidases and carboxypeptidases. Aminopeptidases and carboxypeptidases hydrolyze the peptide bonds close to the N-terminus or C-terminus of the protein substrate, while the action point of endopeptidases is located inside the protein, away from its N-terminus and C-terminus. These enzymes act together on the peptide bonds in the protein molecule to hydrolyze the protein into oligopeptides and amino acids. The peptide bonds in the hydrolyzed protein are shown in the figure below. This product mainly contains endopeptidase activity, and contains a small amount of aminopeptidase and carboxypeptidase activity.

Application Instructions:
The general recommended dosage is 0.01-3kg enzyme preparation per ton of raw materials. However, due to differences in application areas and raw material composition and process parameters in each factory, the actual addition method and dosage of this product should be determined through experiments.
Safety Information:
As enzymes are protein-based substances, they may cause allergic reactions if inhaled by sensitive individuals. Prolonged exposure may irritate the skin, eyes, and mucous membranes. It is recommended to wear protective masks when handling the product. In case of contact with skin or eyes, rinse immediately with water. After opening, reseal the bag or container tightly to prevent the deactivation of active enzyme components.
