Compound enzyme preparation (lipase (esterification type))

Compound enzyme preparation (lipase (esterification type)), also known as esterifying enzyme, is a compound of lipase and soluble dextrin. It is mainly used in the production of aroma esters in the process of liquor production and can effectively improve the yield of liquor.

Product Overview:

Compound enzyme preparation (lipase (esterification type)), also known as esterifying enzyme, is a compound of lipase and soluble dextrin. It is mainly used in the production of aroma esters in the process of liquor production and can effectively improve the yield of liquor.

How It Works:

The main aroma substance of Luzhou-flavor liquor is ethyl caproate, which is less in the third stage liquor, so the quality of the third stage liquor is lower. By adding caproic acid and esterification enzyme to the third stage liquor, the esterification enzyme can catalyze the esterification reaction between caproic acid and ethanol in the liquor to generate a large amount of ethyl caproate, thereby improving the quality of the liquor.

Key Features:

  • Does not need to be adjusted to a specific pH. It can react normally under acidic conditions (as low as pH 3.2). It is easy to operate and does not require heating and temperature control.
  • Food grade, safe, green and pollution-free.

Application Instructions:

  1. Take the third stage of wine, adjust the alcohol content to 35%~50%, add 2% of the biological fermented caproic acid or yellow water of the third stage of wine (the amount of yellow water added is related to the caproic acid content in the yellow water), and mix wel.
  2. Adjust the pH of the mixed solution to about 3.5; add 0.05%~0.15% of esterification enzyme to the mixed solution and react at room temperature for 4 hours; pour the solution after the reaction back and distill it again.

Packaging & Storage:

  • Packaging: The solid dosage form of this product is packaged in aluminum foil bags with a specification of 1kg/bag.
  • Storage: Store in a cool, dry, and well-ventilated area, away from direct sunlight. When stored below 25°C, the product has a shelf life of 12 months. Some enzyme activity may remain after this period if stored under uncontaminated conditions. Adjust dosage accordingly if used past the expiration date.

Safety Information:

As enzymes are protein-based substances, they may cause allergic reactions if inhaled by sensitive individuals. Prolonged exposure may irritate the skin, eyes, and mucous membranes. It is recommended to wear protective masks when handling the product. In case of contact with skin or eyes, rinse immediately with water. After opening, reseal the bag or container tightly to prevent the deactivation of active enzyme components.
