Product Overview:
Compound Enzyme Preparation (Lipase – Esterification Type), also known as Esterase, is a blend of lipase and soluble dextrin. It is primarily used in the production of esters during the brewing process of white spirits (Baijiu), significantly enhancing the aroma and yield of the final product.
How It Works:
The main aroma compound in aromatic white spirits is ethyl hexanoate, which is typically low in the third-stage distillation of Baijiu, resulting in a lower-quality spirit. By adding hexanoic acid and esterase to the third-stage distillate, the enzyme catalyzes the esterification of hexanoic acid with ethanol, producing a high concentration of ethyl hexanoate, which improves the overall quality of the spirit.

Application Instructions:
- Adjust the alcohol concentration of the third-stage distillate to 35%–50%.
- Add 2% of biological fermented hexanoic acid or yellow water (the amount depends on the hexanoic acid concentration in the yellow water).
- Adjust the pH of the mixture to approximately 3.5.
- Add 0.05%–0.15% of the esterase and allow it to react at room temperature for 4 hours.
- After the reaction, distill the solution again.
Note: Since this is an enzyme preparation, the enzyme will be inactivated during distillation, ensuring it does not remain in the final distilled product, making the entire process safe and pollution-free.
Packaging & Storage:
This product is supplied in a solid form, packaged in aluminum foil bags of 1kg each. As a biologically active substance, the enzyme is sensitive to high temperatures, strong acids, and strong alkalis, which may cause inactivation. During transportation and storage, avoid exposure to sunlight and rain. Store in a clean, cool, and dry warehouse.
Safety Information:
Enzymes are protein-based substances and may cause allergic reactions if inhaled or exposed to sensitive individuals. Prolonged contact may irritate the skin, eyes, or mucous membranes. It is recommended to wear protective masks during handling. In case of skin or eye contact, rinse immediately with water. After opening a bag or container, seal tightly if not fully used to prevent loss of enzyme activity.
